This week is proving to be as busy as the last--and I still have an iPhone full of food pics--so I decided to share some more meal ideas with you. I'll do my best to return soon with more words than photos ;)
Wildflour Bakery does it again. This one has already been on Facebook but I have to make sure no one missed it. I made a deal with myself recently that I'd always try to freshen up prepared food when I could, so I love adding stuff to their vegan chili: shredded carrots (and sometimes halved cherry tomatoes), some Daiya shreds, and always "croutons" from The Avocado of the Month Club. Yes, it's a real thing. I have never found decent avos in the stores I go to, but I can count on these babies arriving carefully packaged and ready to ripen. Check them out online--you won't regret it.
I was delighted to receive a surprise birthday gift (thanks, Coll!) from the folks at Fat Stone Farm earlier this month. A glug of their beautiful Elderberry Apple Shots pairs nicely with Whole Foods' Italian Sparkling Mineral Water, making a refreshing, pretty drink. Bill and Liz live close to the Earth and it shows in all they do. They've got a great thing going ... and I'm not just saying that because I've known Bill since he was in Garanimals. My friend Susan has shared her gazpacho (and the recipe) with me several times, but once you know the basics you can freestyle all you want. I dump a couple of cans of whole peeled tomatoes, some seeded cukes, chopped onion, a little olive oil, and seasonings (salt, pepper, Bragg's liquid aminos, garlic and chili powders, and lots of cumin and cilantro for me) into a bowl to chill overnight--this is what it looks like at this stage. Whiz the next morning with an immersion blender and I challenge you to stop eating it all right then and there.
