Wildflour is an amazing vegan bakery I discovered several years ago in Pawtucket, RI. It's become a regular stop on my way to (and often also from) my parent's house in Connecticut, when I stock up on cold-pressed juices, fresh salads, and gluten-free treats. I enjoyed this Creamsicle smoothie and was tickled to discover I could make a pretty decent copycat at home with oranges, coconut milk, and lots of ice.

If you haven't discovered Trader Joe's Chopped Veggie Mix, get on that! It's the perfect base for so many things. For lunch at work this day I simply tossed it with Drew's Rosemary Balsamic dressing. Quick and easy. Taste the rainbow!
